
Steps
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
- Add the diced chicken breast to the pot and cook until browned.
- Pour in the chicken broth and bring it to a gentle simmer.
- Stir in the soy sauce, and then add the mushrooms, carrots, and bok choy.
- Simmer for about 10 minutes until the vegetables are tender and the chicken is cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped spring onion and fresh cilantro.
