Steps

1. Preheat your oven to 325°F (160°C). 2. In a mixing bowl, whisk together the eggs, erythritol, vanilla extract, and salt until well combined. 3. Slowly add the cooled brewed coffee to the egg mixture, whisking continuously to prevent curdling. 4. Pour the mixture into a small, oven-safe ramekin. 5. Place the ramekin in a larger baking dish and fill the dish with hot water halfway up the sides of the ramekin to create a water bath. 6. Bake for 25-30 minutes, or until the flan is set and a knife inserted in the center comes out clean. 7.
