Greek Veggie-Potato Stuffed Peppers

A classic Greek dish reinvented with potatoes and a delicious vegan twist. This vegetarian main dish is sure to satisfy everyone!

Steps

1. Preheat oven to 375 degrees F (190 degrees C). 2. Cut the bell pepper open and remove the stems and seeds. 3. Place it in a baking dish with the open side up. 4. In a bowl, mix together the potatoes, onion, minced garlic, olive oil and oregano. Add salt and pepper to taste and mix again. 5. Fill the pepper with the potato filling and if you are using feta cheese, sprinkle the feta over the top. 6. Bake in preheated oven for 25 minutes, or until the pepper is softened. 7. Serve immediately and enjoy!
