Steps
1. Preheat your grill to medium-high heat.
2. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, pepper, and Dijon mustard to create a marinade.
3. Rub the marinade all over the rack of lamb, ensuring it's well-coated.
4. Place the lamb on the grill, bone side down, and cook for about 15-20 minutes for medium rare, turning occasionally.
5. Use a meat thermometer to check for an internal temperature of 130°F for medium rare.
6. Remove from the grill and let it rest for 5 minutes before slicing.
7. Serve with lemon wedges on the side.
