Steps
1. Slice the zucchini lengthwise into 1/4-inch thick strips to form the 'sandwich' base.
2. Heat a non-stick skillet over medium heat and lightly grill the zucchini slices for about 2-3 minutes on each side until slightly softened.
3. Spread cream cheese evenly over one side of each zucchini slice.
4. Layer smoked salmon on top of the cream cheese.
5. Sprinkle capers and fresh dill over the salmon. Season with salt and pepper to taste.
6. Top with another zucchini slice, cream cheese side down, to form a sandwich.
7. Serve with a slice of lemon on the side for a fresh hint of flavor.
