Stir-Fried Vegetables

This stir-fried vegetable dish is a quick and easy way to get your five-a-day in one meal. It is packed full of flavour, and is sure to be a hit with the whole family!

Steps

1. Heat the oil in a large frying pan over a medium heat. 2. Add the onion and pepper and fry for 5 minutes. 3. Add the courgette and garlic and fry for a further 3 minutes. 4. Add the chilli flakes (if using), mushrooms and green beans and fry for a further 5 minutes. 5. Add the soy sauce, salt and pepper and stir to combine. 6. Serve hot with your choice of sides.

Ingredients

1 tablespoon of vegetable oil, 1 onion, 1 red pepper, 1 courgette, 1 garlic clove, 1 teaspoon of chilli flakes (optional), a handful of mushrooms, a handful of green beans, 1 teaspoon of soy sauce, a pinch of salt, a pinch of black pepper.
