1. Preheat your oven to 375°F (190°C). 2. Slice the tops off the tomatoes and scoop out the insides, leaving a sturdy shell. 3. In a bowl, combine cooked quinoa, chopped spinach, feta cheese, minced garlic, olive oil, salt, pepper, and oregano. Mix well. 4. Stuff the mixture into each tomato, packing it tightly. 5.
