Steps
1. In a bowl, combine soy sauce, honey, garlic powder, salt, and pepper to create a marinade.
2. Add the chicken breast to the marinade, ensuring it's well coated. Let it marinate for at least 15 minutes.
3. Heat olive oil in a pan over medium heat. Add the marinated chicken and cook for about 5-6 minutes on each side until fully cooked.
4. Add the sliced bell pepper and pineapple chunks to the pan, stirring well. Cook for an additional 3-4 minutes until the peppers are tender and the pineapple is slightly caramelized.
5. Serve the chicken and pineapple mixture over cooked rice if desired.
