Asian Tofu Salad with Ginger-Soy Dressing

A refreshing and flavorful tofu salad with a zesty ginger-soy dressing.

Steps

1. Press tofu to remove excess water and cut into cubes. 2. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, and honey to make the dressing. 3. Toss tofu cubes in 1 tbsp of the dressing and let marinate for 15 minutes. 4. In a large bowl, combine salad greens, carrots, and cucumbers. 5. Top with marinated tofu, chopped peanuts, and cilantro. 6. Drizzle remaining dressing over the salad. 7. Toss gently to combine and serve.
