Caribbean Jerk Cod Cakes with Sweet Potato

1. In a bowl, combine the flaked cod, mashed sweet potato, chopped red onion, coriander, and jerk seasoning. Mix until well combined. 2. Season the mixture with salt and pepper to taste. 3. Form the mixture into small patties, about the size of your palm. 4. Coat each patty in panko breadcrumbs, pressing gently to adhere. 5. Heat olive oil in a skillet over medium heat. Add the cod cakes and cook for about 3-4 minutes on each side or until golden brown and crispy. 6. Serve hot with a wedge of lime on the side.
