Steps
1. Heat olive oil in a skillet over medium heat.
2. Season the chicken thigh with salt and pepper, then add it to the skillet. Sear both sides until browned, about 4-5 minutes each side.
3. Remove the chicken and set aside. In the same skillet, add chopped onion and garlic, sautéing until translucent.
4. Stir in brewed coffee, soy sauce, and brown sugar, scraping the bottom of the skillet for any browned bits.
5. Return the chicken to the skillet, cover, and reduce heat to low. Simmer for 25-30 minutes until the chicken is cooked through.
6. Serve hot, garnished with fresh parsley.
