
Steps
- Marinate the chicken in a mixture of lemongrass, ginger, soy sauce, salt, and pepper for 30 minutes.
- Cook the jasmine rice according to package instructions.
- In a pan, heat olive oil over medium heat. Add garlic, bell pepper, and carrot, and stir-fry until tender.
- Remove the vegetables and add the marinated chicken to the same pan. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.
- Serve the chicken over a bed of jasmine rice, topped with stir-fried vegetables, and garnish with fresh cilantro.
