Steps
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix minced garlic, olive oil, rosemary, thyme, lemon juice, salt, and pepper.
3. Rub the herb mixture all over the rabbit leg, ensuring it’s well coated.
4. Place the rabbit leg in a baking dish and surround it with diced potatoes and sliced carrots.
5. Roast in the preheated oven for about 35-40 minutes, or until the rabbit is cooked through and reaches an internal temperature of 160°F (70°C).
6. Let it rest for 5 minutes before serving. Enjoy your herb-roasted rabbit with the roasted vegetables.
