Steps
1. Heat olive oil in a skillet over medium heat.
2. Add the sliced onion and sauté for about 5 minutes, until they start to soften.
3. Add the sliced carrots to the skillet and continue to cook for another 10 minutes, stirring occasionally.
4. Drizzle honey over the carrots and onions, mixing well to coat.
5. Season with salt and pepper to taste, and cook for an additional 2-3 minutes until the carrots are tender and glazed.
6. Remove from heat and garnish with fresh parsley before serving.
