Steps
1. Preheat the oven to 400°F (200°C).
2. Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
3. In a small bowl, mix honey, soy sauce, salt, and pepper.
4. Heat a skillet over medium heat and place the duck breast skin-side down. Cook for 6-8 minutes until the skin is crispy.
5. Flip the duck breast and brush the honey mixture over the meat. Cook for an additional 3-4 minutes.
6. Transfer the duck breast to a baking dish and roast in the oven for 8-10 minutes for medium-rare.
7. Meanwhile, toss the sliced vegetables with olive oil, salt, and thyme. Spread them on a baking sheet and roast in the oven for 15 minutes.
8. Once the duck is done, let it rest for 5 minutes before slicing. Serve with the roasted vegetables on the side.
