Steps

2. In a small bowl, mix the fruit jam, soy sauce, and a pinch of salt and pepper.
3. Heat olive oil in an oven-safe skillet over medium heat.
4. Season the chicken thigh with salt and pepper, then place it skin-side down in the skillet.
5. Sear the chicken for about 5-7 minutes until the skin is crispy.
6. Flip the chicken, pour the jam mixture over it, and transfer the skillet to the preheated oven.
7. Bake for 20-25 minutes until the chicken is cooked through and the glaze is bubbly.
8. Remove from the oven and let it rest for a few minutes, then garnish with fresh herbs before serving.
