Steps

2. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
3. Meanwhile, chop the mixed nuts, bell pepper, and cucumber.
4. In a bowl, combine the cooked quinoa, nuts, bell pepper, and cucumber.
5. Drizzle with olive oil and lemon juice, then season with salt and pepper.
6. Mix well and garnish with fresh parsley before serving.
