Steps

1. Soak the dried beans in water overnight. Drain and rinse. 2. In a large pot, sauté the onion and garlic until fragrant. 3. Add the soaked beans, carrot, celery, diced tomatoes, vegetable broth, paprika, cumin, salt, and pepper. 4. Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender. 5. Adjust seasoning if needed. Serve hot, garnished with fresh parsley.
