Steps
1. In a saucepan, bring water or vegetable broth to a boil.
2. Add rolled oats and a pinch of salt, then reduce heat to low and simmer for 5 minutes, stirring occasionally.
3. Meanwhile, bring a small pot of water to a gentle simmer and poach the egg for about 3-4 minutes until the whites are set.
4. In a separate pan, sauté spinach or kale in a drizzle of olive oil until wilted.
5. Once the oats are cooked, transfer them to a bowl. Top with sautéed greens, the poached egg, and sliced avocado.
6. Season with salt, pepper, and red pepper flakes if desired. Drizzle with a little more olive oil before serving.
