Steps
1. Heat the olive oil in a skillet over medium heat.
2. Add the diced potato and cook for about 10 minutes, stirring occasionally until they start to soften.
3. Add the chopped onion and continue to cook for another 5 minutes until the onion is translucent.
4. Stir in the diced tomato, paprika, salt, and pepper, cooking for an additional 5 minutes until the tomatoes are softened and everything is well combined.
5. Remove from heat, garnish with fresh parsley if desired, and serve hot.
