
Steps
- Preheat your oven to 375°F (190°C).
- Cut the top off the bell pepper and remove the seeds and membranes.
- In a bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, smoked paprika, salt, and pepper. Mix well.
- Stuff the mixture into the bell pepper until filled.
- Place the stuffed pepper in a baking dish and cover with foil.
- Bake for 25-30 minutes or until the pepper is tender.
- If using cheese, uncover the pepper in the last 5 minutes of baking to melt the cheese on top.
- Garnish with fresh cilantro before serving.
