
Steps
- Make the pasta dough by combining flour and a pinch of salt on a clean surface. Create a well in the center and add the egg and olive oil. Mix until a dough forms, then knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- While the dough rests, prepare the banana puree. In a blender, combine the ripe banana, honey, and lemon juice. Blend until smooth and creamy. Set aside.
- Roll out the pasta dough into thin sheets using a pasta machine or rolling pin. Cut into squares (about 5x5 cm).
- Place a small spoonful of shredded meat in the center of each square. Moisten the edges with water, fold the pasta over, and press to seal, ensuring there are no air bubbles.
- Bring a pot of salted water to a boil and cook the ravioli for about 3-4 minutes until they float to the surface.
- Drain the ravioli and plate them. Drizzle with banana puree and garnish with fresh basil leaves and a sprinkle of black pepper.
