Preheat the oven to 180°C (350°F).
Cut the top off the bread roll and scoop out some of the inside to create space for the filling.
In a skillet, heat olive oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until softened.
Remove from heat and mix in the mozzarella cheese, fresh basil, salt, and pepper.
Stuff the mixture into the hollowed bread roll and sprinkle Parmesan cheese on top.
Place the stuffed bread on a baking sheet and bake for 15-20 minutes until the cheese is melted and the bread is golden.
