
Steps
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add the diced tomatoes to the skillet and cook for about 3-4 minutes until they soften.
- Push the tomatoes to the side and crack the eggs into the skillet, stirring gently to scramble them with the tomatoes.
- Add the cooked pasta to the skillet and mix everything together, seasoning with salt and pepper to taste.
- Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with fresh basil if desired.
