Steps
1. In a bowl, combine yogurt, cumin, paprika, garlic powder, salt, and pepper. Mix well.
2. Add the chicken breast to the marinade, ensuring it's fully coated. Let it marinate for at least 30 minutes.
3. Preheat a grill or skillet over medium heat. Cook the marinated chicken for 6-7 minutes on each side or until fully cooked.
4. While the chicken is cooking, prepare the quinoa according to package instructions.
5. In a serving bowl, place the cooked quinoa as the base.
6. Slice the cooked chicken and place it on top of the quinoa.
7. Add halved cherry tomatoes, diced cucumber, and drizzle with olive oil.
8. Garnish with fresh parsley before serving.
