
Steps
- Heat the olive oil in a medium size pot over medium-high heat.
- Add the onions and cook until they are translucent.
- Add the vegetarian chicken and cook until lightly browned.
- Add the carrots and potatoes to the pot and mix until everything is evenly coated.
- Add 1 cup of water and cover the pot. Increase the heat to high and bring to a boil.
- Reduce the heat to low and simmer, covered, for 15 minutes or until the vegetables are cooked through.
- Remove the pot from the heat and season with salt and pepper to taste. Serve and enjoy!
