Steps
1. Rinse the quinoa under cold water and cook it according to package instructions (usually about 15 minutes).
2. In a medium pan, heat the olive oil over medium heat. Add the grated carrot and corn, sautéing for about 5 minutes until tender.
3. Once the quinoa is cooked, fluff it with a fork and mix in the sautéed carrot and corn.
4. Add the chopped spinach, lemon juice, salt, and pepper. Stir well to combine.
5. Serve warm, garnished with fresh herbs.
