1. Peel and chop the potatoes into bite-sized pieces. Dice the onion, mince the garlic, and grate the ginger. 2. Heat the vegetable oil in a large pan over medium heat. Add the diced onion and cook until softened. 3. Add the minced garlic and grated ginger to the pan and cook for another minute. 4. Stir in the curry powder and salt, coating the onions, garlic, and ginger with the spices. 5. Add the chopped potatoes to the pan and mix well, ensuring they are coated with the curry mixture. 6. Pour in the water and bring to a simmer. Cover the pan and cook for about 15-20 minutes or until the potatoes are tender. 7. Serve the Aloo Curry hot with steamed rice or naan bread.
