Steps

3. Carefully slice the chicken breast horizontally to create a pocket for the filling.
4. Stuff the chicken breast with the cheese and spinach mixture, then secure it with toothpicks if necessary.
5. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for about 3-4 minutes on each side until golden brown.
6. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through.
7. Remove from the oven, let it rest for a few minutes, and then serve hot.
