
Steps
- Heat the vegetable oil in a large skillet over medium heat.
- Season the chicken breast with salt and pepper, then add it to the skillet and cook until browned on both sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the cumin, cinnamon, chili powder, and cocoa powder to the skillet. Stir well to combine.
- Add the chicken broth, tomato paste, and peanut butter to the skillet. Stir until the ingredients are well incorporated.
- Return the chicken breast to the skillet and bring the mixture to a simmer. Cover and cook for 20-25 minutes, or until the chicken is cooked through and tender.
- Serve the Chocolate Chicken Mole with rice or tortillas, garnished with fresh cilantro if desired.
