Steps

1. Cook the spaghetti in salted boiling water according to package instructions until al dente. 2. In a bowl, whisk together the egg, grated Parmesan, and a pinch of salt and pepper to form a smooth mixture. 3. In a pan, cook the pancetta or bacon over medium heat until crispy. Add minced garlic for the last minute. 4. Once the spaghetti is cooked, reserve a little pasta water and drain the rest. 5. Quickly add the hot spaghetti to the pan with the pancetta, tossing to combine. 6. Remove from heat and immediately pour the egg mixture over the pasta, mixing quickly to create a creamy sauce. If it's too thick, add a splash of reserved pasta water. 7. Serve immediately, garnished with fresh parsley and extra Parmesan if desired.
