Steps
1. Preheat your grill or grill pan over medium heat.
2. Brush the peach halves and chicken breast with olive oil, and season with salt and pepper.
3. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink inside.
4. During the last 2-3 minutes of cooking, add the peach halves to the grill cut-side down and grill until caramelized, about 2-3 minutes.
5. Remove the chicken and peaches from the grill and let them rest for a few minutes.
6. Slice the chicken and peaches.
7. In a large bowl, toss the mixed greens with balsamic vinegar.
8. Top the greens with sliced chicken and peaches. Optionally, sprinkle crumbled feta cheese on top.
9. Serve immediately and enjoy your delicious salad!
