
Steps
- Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork and season with salt, pepper, and optional garlic powder.
- In a small skillet, melt the butter over medium heat.
- Crack the eggs into the skillet and cook them sunny-side up or to your desired doneness. Season with salt and pepper.
- While the eggs are cooking, spread the mashed avocado on a plate.
- Once the eggs are done, place them on top of the avocado spread.
- Sprinkle with fresh chives and paprika if desired.
