Masala Bhindi (Indian Spiced Okra)

This side dish is a spiced mixture of okra, onions and tomatoes that has a wonderful combination of flavors.

Steps

1. Heat oil in a large skillet over medium heat. 2. Add the cumin seeds and fry until the seeds sizzle and become fragrant. 3. Add the okra and fry for 5-7 minutes, stirring occasionally until the okra is lightly browned and cooked through. 4. Add the onion, garlic, turmeric and salt. Stir and cook for 5 minutes or until the onions are soft and translucent. 5. Add the tomatoes and red chili powder. Stir and cook for a few more minutes or until the tomatoes are soft. 6. Serve hot with warm naan or chapati.
