Steps

1. Cook the couscous according to package instructions and let it cool. 2. In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. 4. Pour the dressing over the couscous salad and toss to combine. 5. Chill in the fridge for at least 30 minutes before serving.
