Steps
1. Rinse the quinoa under cold water.
2. In a small pot, combine quinoa and vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes.
3. While the quinoa cooks, prepare the vegetables: chop the cherry tomatoes, cucumber, and bell pepper.
4. In a large bowl, combine cooked quinoa, chopped vegetables, and chickpeas.
5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss gently to combine.
6. Serve in a bowl and garnish with fresh parsley.
