Steps
1. In a bowl, mix the yogurt, minced garlic, cumin, paprika, salt, and pepper to create a marinade.
2. Add the chicken breast to the marinade, ensuring it is well coated. Let it marinate for at least 15 minutes.
3. Heat olive oil in a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
4. While the chicken cooks, prepare the salad by mixing cherry tomatoes, cucumber, and parsley in a bowl. Drizzle with a little olive oil, salt, and pepper.
5. Once the chicken is cooked, slice it and serve it on top of the yogurt salad, garnished with extra parsley if desired.
