Steps
1. Start by seasoning the chicken breast with salt, pepper, and thyme on both sides.
2. Heat the olive oil in a skillet over medium heat.
3. Once hot, add the chicken breast and cook for about 5-7 minutes on each side, or until fully cooked through.
4. In the last minute of cooking, add the jam to the skillet, allowing it to melt and coat the chicken.
5. Remove from heat and let it rest for a couple of minutes.
6. Serve the chicken on a bed of mixed greens, drizzling any remaining jam glaze over the top.
