Steps
1. Preheat your oven to 200°C (400°F).
2. In a small bowl, mix jelly and soy sauce until well combined.
3. Season the chicken breast with salt and pepper.
4. Heat olive oil in an oven-safe skillet over medium heat, then add the chicken breast and sear for about 5 minutes on each side until golden brown.
5. Brush the jelly mixture over the chicken breast evenly.
6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature of 75°C or 165°F).
7. Remove from the oven, let rest for 5 minutes, then garnish with fresh herbs if desired and serve.
