Steps

2. Add the rolled oats, reduce the heat, and simmer for about 5 minutes, stirring occasionally.
3. While the oatmeal is cooking, heat olive oil in a small skillet over medium heat.
4. Add fresh spinach and sauté until wilted, about 2-3 minutes.
5. In another pot, bring water to a gentle simmer and poach the egg for about 3-4 minutes.
6. Once the oats are cooked, season with salt and pepper. Transfer to a bowl.
7. Top the oatmeal with the sautéed spinach and the poached egg.
8. Sprinkle with chili flakes and grated Parmesan cheese if desired.
