- In a small saucepan, bring the vegetable broth to a boil.
- Add the rolled oats, reduce the heat, and simmer for about 5 minutes, stirring occasionally.
- While the oatmeal is cooking, heat olive oil in a small skillet over medium heat.
- Add fresh spinach and sauté until wilted, about 2-3 minutes.
- In another pot, bring water to a gentle simmer and poach the egg for about 3-4 minutes.
- Once the oats are cooked, season with salt and pepper. Transfer to a bowl.
- Top the oatmeal with the sautéed spinach and the poached egg.
- Sprinkle with chili flakes and grated Parmesan cheese if desired.
