Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix the Dijon mustard, honey, olive oil, salt, and pepper until well combined.
3. Rub the mixture all over the chicken thigh, ensuring it’s coated evenly.
4. Place the chicken thigh in a baking dish and roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
5. Let it rest for a few minutes before serving. Garnish with fresh thyme if desired.
