Spherified Mango Passion

A modern twist on dessert, featuring spherified mango pearls that burst with tropical flavor, served with a coconut foam.

Steps

  1. Prepare the mango pearls:
  2. - Blend mango puree with sodium alginate until smooth.
  3. - Mix calcium lactate with water in a separate bowl.
  4. - Drop small spoonfuls of the mango mixture into the calcium bath and let them form into pearls for 1-2 minutes.
  5. - Remove pearls and rinse with water.
  6. Prepare the coconut foam:
  7. - Mix coconut milk with soy lecithin.
  8. - Blend with an immersion blender until foam forms on top.
  9. Assemble:
  10. - Serve mango pearls in a small dish and top with coconut foam.
  11. - Garnish with a mint leaf, if desired.

  • 200ml water
  • 2g calcium lactate

  • 50ml coconut milk
  • 1g soy lecithin
