
Steps
- Prepare the mango pearls:
- - Blend mango puree with sodium alginate until smooth.
- - Mix calcium lactate with water in a separate bowl.
- - Drop small spoonfuls of the mango mixture into the calcium bath and let them form into pearls for 1-2 minutes.
- - Remove pearls and rinse with water.
- Prepare the coconut foam:
- - Mix coconut milk with soy lecithin.
- - Blend with an immersion blender until foam forms on top.
- Assemble:
- - Serve mango pearls in a small dish and top with coconut foam.
- - Garnish with a mint leaf, if desired.
