Steps
1. Cut chicken breasts into tenders and season with salt, paprika, and garlic powder.
2. Heat 1 tablespoon olive oil in a pan over medium-high heat and cook the chicken tenders for about 5 minutes, flipping them over after 2 minutes.
3. In the meantime, prepare the sauce: in a small bowl, mix together the watermelon juice, rice vinegar, maple syrup, sesame oil, and cornstarch.
4. When the chicken tenders are fully cooked, pour the sauce onto the pan and stir everything together. Allow the sauce to simmer for about 5 minutes until it’s thick, stirring occasionally.
5. Serve the sweet and sour watermelon chicken with your favorite side dish.
