Wada Pav with Spicy Fried Chillies

Indulge in the iconic Indian street food, Wada Pav, featuring a spiced potato fritter sandwiched between soft bread, complemented by crispy fried salted chillies that add a zesty kick to every bite.

Steps

1. Heat oil in a pan, add mustard seeds and cumin seeds. Let them splutter. 2. Add the chopped green chilli, turmeric powder, and mashed potato. Mix well. 3. Add garam masala and salt, stir, and let the mixture cool. 4. Once cool, shape the potato mixture into a small round patty. 5. In a bowl, mix chickpea flour with a pinch of salt and water to form a thick batter. 6. Heat oil in a frying pan for deep frying. 7. Dip the potato patty in the chickpea batter and fry until golden brown. Drain on paper towels. 8. For the fried chillies, heat oil in a separate pan, add slit green chillies and fry until crispy. Sprinkle with salt. 9. Assemble the Wada Pav by placing the fried potato patty in the pav and serve with fried chillies on the side.

For the Wada: - 1 medium potato (boiled and mashed) - 1/2 tsp mustard seeds - 1/2 tsp cumin seeds - 1/4 tsp turmeric powder - 1 green chilli (finely chopped) - 1/2 tsp garam masala - Salt to taste - 1 tbsp oil - 1/4 cup chickpea flour (besan) - Water (as needed) - 1 pav (bread roll) For the Fried Chillies: - 2-3 green chillies (slit) - Salt (to taste) - Oil (for frying)
