Steps
1. Prepare the brown rice according to package instructions and let it cool.
2. In a pan, heat the sesame oil and scramble the beaten egg until fully cooked. Season with a pinch of salt.
3. Place the nori sheet on a bamboo sushi mat or a clean surface.
4. Spread the cooked brown rice evenly over the nori, leaving a 1-inch border at the top.
5. Layer the mackerel, scrambled egg, cucumber, and carrot in the center of the rice.
6. Carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
7. Use a sharp knife to slice the roll into bite-sized pieces.
8. Serve with soy sauce for dipping.
