Steps
1. Preheat your oven to 400°F (200°C).
2. Peel and cube the sweet potato, then toss with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 25 minutes or until tender.
3. In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
4. Add the chicken breast, seasoning with salt, pepper, and paprika. Cook for about 5-6 minutes on each side or until fully cooked through.
5. Once the chicken is cooked, add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
6. Drizzle with lemon juice and stir to combine.
7. Serve the chicken with roasted sweet potatoes on the side.
