Steps
1. Heat vegetable oil in a pan over medium heat.
2. Add diced onion and minced garlic, sauté until fragrant and golden brown.
3. Add chicken pieces to the pan and cook until browned on all sides.
4. In a small bowl, mix together curry powder, turmeric, cumin, paprika, salt, and black pepper.
5. Sprinkle the spice mixture over the chicken and stir well to coat.
6. Pour in coconut milk, soy sauce, and honey. Stir to combine.
7. Reduce heat to low, cover the pan, and simmer for 15-20 minutes, or until chicken is cooked through and tender.
8. Serve the coconut curry chicken over steamed rice or with naan bread.
9. Garnish with fresh cilantro before serving.
