Steps
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a skillet, heat olive oil over medium heat and add the ground beef. Season with salt and pepper, cooking until browned and fully cooked, about 5-7 minutes.
3. While the beef cooks, scoop the avocado flesh into a bowl and mash it with a fork. Add salt, pepper, and a splash of lemon juice for flavor.
4. In the same skillet, push the cooked beef to the side and crack an egg into the pan, frying it sunny-side up until the whites are set but the yolk is still runny.
5. Combine the cooked pasta with the beef, mixing well. Serve on a plate topped with the mashed avocado and the fried egg. Garnish with fresh herbs if desired.
