
Steps
- Heat the vegetable oil in a pan over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute.
- Cut the chicken breast into bite-sized pieces and add them to the pan.
- Sprinkle in the curry powder, turmeric, cumin, and salt. Stir to coat the chicken in the spices.
- Pour in the coconut milk and bring to a simmer. Cook for about 10-12 minutes, or until the chicken is cooked through.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro if desired.
