Steps
1. Preheat the grill to medium heat.
2. Season the chicken breast with salt, pepper, and half of the olive oil.
3. Place the chicken on the grill and cook for about 6-7 minutes per side until fully cooked.
4. While the chicken is grilling, brush the peach halves with the remaining olive oil and place them cut side down on the grill. Grill for 2-3 minutes until caramelized.
5. In a small bowl, mix the balsamic vinegar, honey (if using), salt, and pepper to create the vinaigrette.
6. Once the chicken is cooked, slice it thinly.
7. In a bowl, combine the mixed greens, grilled peach halves, and sliced chicken.
8. Drizzle the vinaigrette over the salad and toss gently.
9. Top with crumbled feta cheese if desired.
10. Serve immediately.
